Knipschildt Chocolatier, LLC: Ensemble Box of Easter Eggs

Outstanding Innovation in Packaging Design or Function sofi Gold Winner 2010

Fritz Knipschildt, born and raised in Denmark, has always been interested in mixing unusual ingredients in the kitchen. Trained as a chef in European restaurants, Knipschildt had worked with savory ingredients for years when he opened his chocolate business in Norwalk, Ct., in 1999. Thanks to his experience as a chef, he began mixing non-traditional flavorings, such as chiles, sea salt or truffle oil, with chocolate—long before it was so trendy to do so.

In 2005 he applied this creative instinct to the packaging for Knipschildt’s exquisite, hand-painted chocolate eggs by putting them in a container that looks like a cardboard egg carton tied with a beautiful bow. The ensemble box of ganache-filled Easter eggs—containing three dark chocolate, three milk chocolate nougatine and three white chocolate passionfruit eggs—is only available in the spring.

“The packaging is recyclable but we recommend people reuse it,” says Torben Bang, executive pastry chef and chocolatier.  “Imagine this box on an Easter brunch table with real eggs in it [after you’ve enjoyed the chocolate ones]. It’s so unique and cute on a well-decorated table,” Bang adds.

For retailers, Bang suggests an eye-catching visual display to attract consumer attention. He recommends opening the carton up and shrink-wrapping it so customers can see the individually hand-painted chocolate eggs in festive spring colors nestled in hay. —D. Moss
