Amy E’s Bakery, LLC: Almond Toffee

Amy Edwards, Owner and Founder of Amy E's Bakery, started her company for one simple reason. “I like to feed people,” she says. “Before I was in business, I would wake up and go through cookbooks to see what I could make, but I didn’t have an outlet to get it out of the house. I needed people to feed.”

Eventually, Edwards started making desserts and wedding cakes with “real ingredients” such as butter and eggs, she says. Early on, she discovered that people in her hometown of Moscow, Idaho, were not necessarily interested in “whether there was real butter in their buttercream icing,” and she realized she needed to ship her organic products out to reach a larger market.

Edwards started making organic Pecan Toffee to use in biscotti. “Turns out we liked that toffee more than the biscotti,” she notes. She experimented with an Almond Toffee recipe she found in a cookbook until she got it just right, using organic ingredients. “The toffee is one of my favorite things we offer,” she says. “I made it for friends and family for years before adding it as a product.”

Amy E’s also sells a Brazil Nut Toffee (created in honor of Edwards’ uncle, who liked Brazil nuts). All her toffees are certified organic without added preservatives, colors or artificial flavors.

Edwards recommends retailers place the toffee in a small basket near the checkouts for a sweet impulse buy. —D. Moss

This classic toffee is loaded with chopped and toasted organic almonds, covered with a thick layer of rich, buttery toffee and finished with a thin layer of dark chocolate and more nuts. The toffee starts out crunchy and then melts in your mouth without hardening to your teeth. This is a certified-organic product and contains no added preservatives, colors or artificial flavors. Also available in Brazil Nut Toffee.
