Sticky Toffee Pudding—A hot, cake-based dessert made with dates and hot buttery toffee sauce—has enjoyed a revival in Britain, where it was once traditional in the northwest Lake District. Though the dessert had been popular nearly a century before, in the 1990s it was rediscovered and soon found on the menus at local pubs and top restaurants.
In 2003, British native Tracy Claros, a speech and language pathologist, decided on a career change. With a passion for baking and a desire to bring traditional British hot puddings to the U.S., Claros packed up some family recipes and made the move to Austin, Texas. She founded The Sticky Toffee Pudding Company in 2004 with the desire to create “fabulous English-inspired desserts on a large scale for Americans to enjoy,” she says.
Before adding fresh dates to her Sticky Toffee Pudding, Claros soaks them in espresso and vanilla. When the cake is done, it is covered with a hot buttery toffee sauce. The 16-ounce family size is shipped frozen and can be merchandised in any refrigerated section. It serves four to six people and has a shelf life of two months refrigerated, or nine months frozen.
The pudding’s container is microwaveable and oven proof. Claros suggests serving the dessert with crème fraîche, custard or cream. Sticky Toffee Pudding is also available in single 5-ounce servings. Other flavors include English Lemon Pudding, Sticky Ginger Pudding and Warm Chocolate and Almond Pudding. —N. Denis
