Vermont Butter & Cheese Creamery's Bijou means “jewel” in French, and this year, it is synonymous with “gold.” Named for its gem-like size, the goat cheese has won the company its fourth sofi™ Gold Award. “The [Summer Fancy Food] Show was great because not only did we win, we introduced new branding, new packaging and a new product,” says Allison Wolf, sales and marketing representative. “We were just showered with love.” The affection continued to flow after the Show, when the creamery’s cheese was featured in The New York Times and on Good Morning America.
Bijou is a soft ripened goat cheese made by hand in the traditional French style. Wolf explains that with Bijou, the creamery wanted to pitch “a new concept for goat cheese salad” based on French sidewalk café tradition. Rather than crumbling it over a salad, the company encourages spreading Bijou on a baguette, melting it and then placing it on a bed of greens.
“Chefs love it because of the simple application and single-portion size,” says Wolf. Consumers appreciate the flavor profile that includes notes of fresh flowers, citrus and hazelnuts. The product comes in custom-made crates that are ideal for foodservice—easy to handle with a design that assures well-ripened cheese.

Made in the traditional French style crottin, Bijou is crafted with fresh, local milk from 20 family farms that Vermont Butter & Cheese Creamery has supported for 25 years. The cheese is hand processed and aged to maturity after 45 days. With a mild goats’ milk flavor and smooth and creamy texture, Bijou is perfect paired with olive oil and fresh herbs, atop a caramelized onion tart or frittata or baked in phyllo dough and finished with dried cherries, chopped hazelnuts and honey.
