Healthier varieties are trending in the approximately $28 billion ice cream and frozen novelties market, according to a new Packaged Facts report. According to the research, more than 85 percent of U.S. households consume ice cream or sherbet and despite the maturity of the market, there are plenty of new products and developments, especially "free-from" products.

"Free-from" lists for ice cream now include not only dairy itself, but also artificial colors, soy, gluten, flavors, preservatives and genetically modified ingredients. Organic products, free of any pesticide residue, are also available. Packaged Facts estimates that foodservice sales of ice cream and frozen novelties outpaced the retail channel by more than $3 billion, but both segments are expected to see gains by 2020.
