Age-old technique demonstrated at Booth 2450

PORTLAND, ME June 16, 2017 — Experience the time honored and historically venerated tradition of opening a wheel of the most traditional of all Italian cheeses, the undisputed King Of Cheese, Parmigiano Reggiano!  On June 25 at 1:00 p.m. at the Fancy Food Show in New York City, Rogers Collection (booth number 2450) will be cracking a very special, 32+ month aged, 80-pound wheel of exquisite Valserena di Sola Bruno (Brown Cow) Parmigiano-Reggiano. The cracking of this aged, hefty wheel requires skill, knowledge, and strength. It is an age-old custom that is quite an honor to witness, and taste.

Ari Weinzweig is a founding partner of Zingerman’s Community of Businesses and author of multiple books including Zingerman’s Guide to Good Parmigiano-Reggiano. As the title of the book suggests, he knows what makes a good Parmigiano-Reggiano and he has traveled twice to visit the Valserena farm. Hear highlights from his visits and learn about this extraordinary cheese with an extraordinary history.

Carlos Yescas directs the Oldways Cheese Coalition, which supports the production and appreciation of artisan and traditional cheese making around the world. Additionally, as one of 14 supreme judges at the World Cheese Awards, and a member of the Guilde Internationale des Fromagers since 2011, Carlos knows a great wheel of Parmigiano-Reggiano when he sees/tastes one!  Oldways Cheese Coalition even organized a trip to visit Societe Agricola Valserena in 2015, as their caseificio adheres to centuries old traditions and has been in continuous production of Parmigiano since 1879.

Società Agricola Valserena is a 5th generation, family owned dairy near Parma and one of the very few remaining full cycle/farmstead producers. Valserena is a member of the Consorzio di Parmigiano Reggiano and the Consorzio di Sola Bruna. Only four dairies belong to the latter which guarantees that the milk for the Parmigiano Reggiano only comes from registered Brown Cows.  The breed is prized for the richness of the milk and the unique characteristics that can be tasted in the finished wheels of cheese.
