Schools Get Creative to Feed Students Amid Shortages

Schools across the country are facing shortages of cafeteria staples like chicken, bread, and apple juice, as supply chain challenges and truck driver shortages make it difficult to feed students nutritious meals, reports The New York Times.

After three food distributors told her that they would stop delivering supplies, Jenna Knuth, director of food and nutrition services at North Kansas City Schools in Missouri, grew worried that she wouldn’t have enough food to feed all 21,500 students in her district, so her staff members make regular trips to Sam’s Club and Restaurant Depot stores where they buy up all the frozen pizzas, tater tots, and hot dogs.

Many of these foods don’t meet federal nutrition guidelines and for some students, the foods they eat at school are their only source of daily nutrition. Full Story
