With its hearty flesh, gleaming purple skin and caviar-like seeds, the Brinjal or Aubergine is considered the “King of Vegetables” in the Middle East and South Asia. Revered in Indian folklore, it is said to attract untold prosperity and treasure. This treasure of a relish has its origins in Western India and, much like its Provençal, Sicilian, and Spanish sisters, its sweet-and-sour taste has natural affinity to oil-rich grilled fish, lamb, nutty cheeses, and breads. Our products rely on classical cookery methods and all-natural preservation techniques to achieve shelf life stability. We are made in the U.S.A. and created in the artisan tradition - hand-made, hand-packaged, hand-sealed and hand-labelled.
