Sur La Table Sources Renewal Mill's Upcycled Flour

Sur La Table, the cooking and dining supply store, has teamed up with upcycled food brand Renewal Mill to release three new gluten-free baking mixes.

Developed by James Beard Award Winner Alice Medrich, the mixes include a gluten-free crepe mix, a gluten-free buttermilk pancake mix, and a gluten-free chocolate chip buttermilk pancake mix – all of which feature Renewal Mill’s upcycled organic okara flour.

Sur La Table has long offered baking mixes, however, this set of gluten-free mixes are the first products in Sur La Table’s baking set to specifically highlight the use of sustainable ingredients. The product packaging uses sidebar real estate to educate Sur La Table customers on both the concept of upcycling and the specific upcycled ingredients used in the mixes.

“Renewal Mill has been the perfect partner for Sur La Table on this journey,” said Laura Hauser, Sur La Table’s principle food buyer, in a statement. “The company’s taste-forward approach and its attention to turning sidestreams into sustainable ingredients for the future are helping shepard in the next phase of development for our brand.”

Renewal Mill is thrilled to have found a new home for its speciality ingredient — organic okara flour – made from the nutritious pulp leftover from premium soymilk and tofu production. “We’ve always seen okara as a hero ingredient worthy of celebration in the highest ranks of the culinary world,” said Caroline Cotto, Renewal Mill co-founder and COO, in a statement. “Sur La Table provides this pedestal and an opportunity for educating a new subset of America’s foodies.”
