An American‑born artisan of Italian descent, Giovanni draws on generations of culinary heritage rooted in his family’s ties to Agerola, Italy, a region known for its cheeses and cured meats. 

Raised in a family business and influenced by time spent on his grandparents’ New England dairy farm, Giovanni is a proponent of ingredient integrity, traditional preservation, and a true farm‑to‑table philosophy. He refined his craft at his father’s pork store and in professional kitchens, developing a disciplined, ingredient‑first approach that continues to define his work today. 

In 2023, Giovanni co‑founded Salumificio G.B., combining old‑world technique with modern production precision. His background in mechanics and engineering plays a vital role in maintaining the company’s state‑of‑the‑art facility, while his people‑driven leadership prioritizes education, transparency, and community. In fact, his favorite part of working in the food industry is “creative collaboration between industry peers.”
