This cheese is mixed with fresh goats' milk, fresh cows' milk and a hint of Vermont cream. The fresh curd, which is made of a special cocktail of yeast and mold, coagulates overnight and is then shaped by hand and aged for two weeks to develop the unique cream colored rind and smooth interior.
