Olympia Provisions is a family-owned meat company based in Portland, Oregon, founded by siblings Elias and Michelle Cairo. Inspired by Elias’s apprenticeship in Switzerland, Olympia Provisions crafts award-winning salami, sausages, pâtés, and deli meats using old-world methods, natural fermentation, real smoke, and carefully sourced, humanely raised pork. Since 2009, the company has grown from a small charcuterie shop into one of America’s most respected makers of European-style meats.
