New Canaan Farms Named SOFI Award Finalist for Olive Rosemary Dijon Mustard

Innovative flavor-forward mustard line crafted by Cordon Bleu–trained chef Laurel Waters

Utopia, Texas — New Canaan Farms is proud to announce that its Olive Rosemary Dijon Mustard has been selected as a SOFI Award Finalist in the Condiments category—an honor recognizing exceptional innovation and quality in specialty foods. Handcrafted in Utopia, Texas, this standout mustard is part of a new elevated flavor category developed by New Canaan Farms owner and chef Laurel Waters, a graduate of Le Cordon Bleu in Paris and veteran of several acclaimed French kitchens.

Drawing on her classical culinary training and deep connection to the flavors of France, Waters created Olive Rosemary Dijon Mustard as a refined, modern expression of one of Europe’s most iconic condiments. The result is a remarkably rich and aromatic mustard featuring distinctive morsels of Kalamata olives and fragrant rosemary, offering both flavor intensity and textural complexity.

“At its best, mustard is more than a condiment—it’s a vehicle for depth and character,” says Waters. “This new collection is meant to surprise and delight with bold ingredients that enhance the mustard rather than overpower it. Olive Rosemary Dijon is my love letter to both France and Texas.”

The Olive Rosemary Dijon Mustard is one of several new culinary-driven mustards Waters has introduced, each developed with the goal of pushing the boundaries of what mustard can be. The line also includes:

  • Sun-Dried Tomato & Basil Mustard – Bright, Mediterranean notes with concentrated tomato sweetness
  • Hatch Chile Mustard – A lively, Southwestern profile celebrating New Mexico’s signature pepper
  • Goat Cheese & Herbes de Provence Mustard – A creamy, herbaceous blend inspired by the Provençal countryside

Waters is also the owner and chef of The Laurel Tree, a sought-after dining destination in Utopia, Texas, where guests experience her refined, French-inspired cooking firsthand. Her culinary philosophy—celebrating regional ingredients with classical technique—is infused into every jar produced at New Canaan Farms.

The SOFI Award recognition underscores New Canaan Farms’ commitment to craftsmanship, premium ingredients, and imaginative flavor development. As specialty retailers continue to seek products that offer both authenticity and culinary excitement, this new mustard category provides a compelling addition to gourmet shelves.
