PICKLED CACTUS START-UP PRESENTS GLOBALLY-INSPIRED PRODUCT LINE AT WINTER FANCY FOOD SHOW

LAS VEGAS, Nev -- Eric's Nopales, a gourmet pickled cactus company, is sampling its new line of shelf-stable pickled prickly pear cactus pads at Specialty Food Association's Winter Fancy Food Show.

Eric's Nopales reimagines a time-honored Mexican ingredient with a modern brand, clean ingredients, and globally-inspired flavors for cactus lovers and newbies alike. The company launched in 2022 with two flavors: Garlic & Dill and Tuscan Herb. In July 2023, they expanded their line to five flavors with the addition of Heat Wave, Taco Truck, and Chili Ginger. In August 2023, Eric's Nopales became available at Central Market stores throughout Texas.

"We see strong market and cultural indicators that heritage and non-heritage consumers want a convenient and delicious way to enjoy this nutritious and climate-friendly wonderfood," said Jillian Ruiz, Co-owner and CEO. "These five flavors reflect the places, cultures, and cuisines we love and showcase the versatility of nopales as a pantry staple."

Eric's Nopales is a first-time exhibitor at the Winter Fancy Food Show. The company's flagship Garlic & Dill product will also be featured at "Meet & Eat with the Fancy Face-Off Finalists" on Sunday at 10:30 a.m. and "Taste the Future of Food with Jonathan Deutsch" on Monday at 3:00 p.m. Eric Ruiz, Co-owner and President, will present as a finalist at the Fancy Face-off Pitch Slam on Monday at 4:00 p.m.
