Renewal Mill Launches New Vanilla Cake Mix Featuring Perfect Day's Animal-Free Egg Replacer

New co-branded SKU debuting at Expo West made with precision fermentation whey protein

Oakland, CA – March 6, 2023 – Upcycled food company Renewal Mill is launching a new gluten-free vanilla cake mix at this year’s Natural Products Expo West conference in Anaheim, CA (March 8-11th). Adding to its line of notable partnerships, the company partnered with precision fermentation company Perfect Day to use its “Protein Pre-Blend Bakery Egg Replacer,” an animal-free whey protein product that mimics the behavior of eggs in baking.

“Upcycled Vanilla Cake & Cupcake Mix” is Renewal Mill’s first cake mix and marks an expansion of the company’s existing baking mix product line sold nationally at Whole Foods Market. The sustainable cake mix, which is gluten-free, animal-free, and features upcycled okara flour from Renewal Mill, was developed by five time James Beard Award Winner Alice Medrich. Perfect Day’s whey-based egg replacer was the key to unlocking cake mixes because it provides structure that’s hard to replicate in traditional egg-free vegan baked goods. Medrich praised Perfect Day’s product saying, “Perfect Day Egg Replacer is a game changer. I didn’t think it possible to reproduce the texture of a classic American-style cake without using actual eggs. I’m excited to have been proven wrong.”

Perfect Day whey protein is made using a proprietary precision fermentation process. Perfect Day’s process is better for the environment, emitting up to 97% less greenhouse gasses, using up to 99% less water, and using up to 60% less nonrenewable energy to make a dairy protein that is nature-identical to the protein found in cow’s milk.
