Podcast Host Creates New Pasta Shape

A new pasta shape, cascatelli, has been created by The Sporkful podcast host Dan Pashman and is being sold by pasta brand Sfoglini, reports Eater. The host set out to create an “optimal” pasta shape three years ago, as documented in a five part series “Mission: ImPASTAble” for his podcast. The pasta was built with three core qualities in mind: “saucability,” or how well sauce adheres to it, “forkability,” how easily it stays on the fork, and “toothsinkability,” or how satisfying it is to eat.

According to Maureen Fant, pasta expert and translator of Encyclopedia of Pasta, there are only about 300 distinct pasta shapes.

After many rounds of designing, engineering, and trial and error, cascatelli, which is named after the Italian word “cascatelle,” meaning little waterfalls, was born.

“The people need this shape. It’s like maybe my top three pasta shapes,” said chef and restaurateur Sohla El-Waylly.

Cascatelli is available to purchase on Sfoglini’s website in 16-ounce, 4-pack, and 5-pound bulk bag sizes. Full Story
