Colorado-Based PRiMO Specialty Foods Launches Two New Mostarde [Fruit Mustards] For Spring 2021

DENVER (May 19, 2021) – PRiMO, a Colorado-based craft producer of designer condiments® for the fine food lover, recently launched two new mostarde in upscale specialty stores across the country and online, including the unique combinations of Apricot + Urfa and Cherry + Aleppo.  

For the adventurous home entertainer, PRiMO’s Apricot + Ufra mostarda offers a supremely layered, intensely aromatic, Marmalade-like texture with mild spice and a subtle but present sharpness. Made from dried apricots, orange juice, brown sugar, cider vinegar, mustard seeds, mustard oil, non-GMO fruit pectin, Urfa biber flakes, and garam masala (cinnamon, cardamom, cloves, spices). Superb with cave-aged cheeses like Beemster’s Gouda XO and 1655 Le Cret Gruyère and with mild and fatty craft meats such as Mortadella, Coppa, Duck Prosciutto and Finocchiona Toscana Salume.

The aspiring cook will have fun with PRiMO’s Cherry + Aleppo mostarda. Featuring fruity, intricate flavors with a mesmerizing spice and a brisk lingering tang, this mostarda is made with red and tart cherries, cane sugar, cider vinegar, fresh ginger, mustard oil, non-GMO fruit pectin, mustard seeds, Aleppo pepper, cinnamon, nutmeg, and spices. Perfect with aged fruity and nutty cheeses like Queso Iberico or P’tit Basque and semi-fatty fancy meats such as Bresaola, Prosciutto di Parma, Jamón serrano and sweet Spanish chorizo.

“We wanted to do something ambitious, upscale and idiosyncratic with the sophisticated food enthusiast and connoisseur in mind and to help expand the specialty category’s core assortments, much like we did with our fruit preserves 14 years ago,” said Founder Vic Papazian. “These mostarde are our playful interpretation of the iconic Italian varietals that inspired them. Ours though, are more nuanced, complex and layered in character and are at home with craft specialty meats and more developed cheeses.”
