Fancypants Baking Co. Introduces Full Line of Upcycled Cookies
WALPOLE, Mass. (April 13, 2021) – Want to eat a truly great cookie without guilt? Today, Fancypants Baking Co. makes it possible to enjoy a sweet indulgence and do our earthly home some good with its introduction of a full line of cookies baked with upcycled ingredients. The cookies come in three flavors: Okara Chocolate Chip Cookies, Double Chocolate Cookies made with coffee cherries, and Vanilla Oat Cookies made with oatmilk pulp. The new line furthers the company’s mission to reduce food waste while creating delicious snacks embodied by the Fancypants motto, Eat a Snack, Save the Planet!
According to the Upcycled Food Association, upcycled food is the way for anyone to help prevent food waste with the products they buy. And, preventing food waste is one of the most powerful solutions to climate change.
It took two years for the bakers to develop this line because they are using next generation ingredients that are relatively unfamiliar to commercial bakeries. For example, the upcycled ingredient in the Double Chocolate chip version is coffee cherry, the byproduct of the coffee bean harvesting process. The Chocolate Chip cookies are baked with okara flour made from pulp generated during soymilk production. Oatmilk pulp, a nutritious byproduct of creating oatmilk, is turned into flour used in the Vanilla Oat cookies.
