Semolina Artisanal Pasta introduces its first-to-market upcycled pasta for consumers and chefs

BERKELEY, CA – August 18, 2021 – ReGrained is excited to announce the launch of a new premium pasta product by Semolina Artisanal Pasta. Featuring the company’s flagship upcycled flour ingredient, SuperGrain, the new pasta is available to consumers and foodservice operators. It is the latest food maker collaboration for ReGrained’s food innovation platform, Upcycled Food Lab.

The new upcycled pasta, Strozzapreti, is a natural complement to the current Semolina Artisanal Pasta product line-up and strengthens its commitment to sustainably-sourced ingredients. Versions of Strozzapreti have long been made across Italy using various flours available in a given region, even potatoes or stale bread. The scroll-like pasta is a contemporary twist on this tradition by blending the company’s signature durum semolina pasta with ReGrained SuperGrain, a unique and nutritious flour made from brewer’s spent grain (BSG) from California breweries. The upcycled Strozzapreti boasts Semolina Artisanal Pasta’s beloved toothy texture and a wonderful malty flavor from SuperGrain while offering 3-times the fiber of traditional whole grain flours. But what makes this collaboration special are shared company values to promote a more sustainable food system.

“Flavor and texture are everything to me, and I just love the nutty, toasted flavor that SuperGrain adds without compromising toothiness,” says Leah Ferrazzani, Founder & Chief Pastaia at Semolina Artisanal Pasta, “I’m excited to offer this new pasta in my product range.”

The new pasta will be available for wholesale (retail, foodservice) customers and direct-to-consumer purchase by October.

SuperGrain+® was the first of many ingredients developed by ReGrained for food manufacturers and foodservice operators. Collaborating with these partners in its Upcycled Food Lab, ReGrained is the go-to upcycled food innovation platform for companies around the world.
