Specialty Food Association

August 16, 2021, LYNNWOOD, WA – World Renowned, Multiple international award-winning extra olive oil producer Castillo de Canena has just released their latest innovative olive oil from Spain. Amontillado Sherry Cask Finished Olive Oil is the first of its kind, an arbequina extra virgin olive oil rested in barrels from famed Sherry producer, Lustau. The result is a slightly sweet and nutty oil with traditional grassy and peppery undertones of arbequina. Castillo de Canena is a family owned company that has been producing olives and olive oil since 1780 in southern Spain.

This new release is a collaboration between two iconic Spanish brands – Lustau, a sherry wine producer since 1896, and single-estate extra olive oil producer Castillo de Canena from Andalucía, Spain. “The goal was to capture the complex and sublime nuances of a great sherry wine in the soul of our classic arbequina extra virgin olive oil”, comments Castillo de Canena Co-founder Rosa Vañó. The oil is rested in a sherry cask that has been used for over 50 years of aging Lustau Amontillado Sherry wines. The barrel imparts notes of toasted nuts, maple, ripe fruit, mushrooms and a delicate hint of sherry to the final oil. Drizzle over grilled fish, shellfish, pork, cheeses and desserts.

The Amontillado Sherry Finished Oil is the latest addition to Castillo de Canena’s line of infused oils which includes the 2015 sofi award-winning Smoked Arbequina Olive Oil, packaged in an artful turquoise bottle, and their Harissa spice-infused oil. Packaged in a 250ml (8.4oz) bottle with a classic sherry cask label design, this new release is an elegant gift for home chefs.
